I like it and would like it even more if it means no more mots or tax/sorn ever again!

Yes tax and MOT exempt.  You need to renew the tax each year I think (I do on my "exempt" one) -  a bit of a farce especially as there's no disc now, but hey, for free.

 

Not sure what insurers have to say about no MOT if anything as my MOT exempt heap is definitely not roadworthy and therefore not insured.

What a waste of a great car.

Why great? After I'd written off Pop M'coli's Cortina Crusader estate in a low-speed t-bone shunt, he bought a 1600 Passat B2 estate. I spent less time fixing the Passat in the next 12.5 years than I had doing the same to the Cortina in the 4 years we had it. VWs of the period had rustproofing that worked more or less and short service intervals for a reason.

If I did go the proper classic route, the Maestro, Uno and White CLX would have to go (eventually), just to give me a decent park under the (leaky) car port.  Not sure if an 803cc engine would get up the hill to the village (or stop going down it), just like the idea of owning a tax free car, no MOT hassles, I'll give the insurance company a ring and see where I would stand regarding covering a car without an MOT.

That's giving me horrible flashbacks - I was trying to work out which door to use to get into a taxi after 9 bottles of Newcy Brown. Ended up perched on the drivers lap. And it wasn't even a taxi, it was a driving instructor.

I wouldn't buy anything from any breaker in the UK, no matter how much I needed it, nor how cheap and otherwise unobtainable it was, if he advertised that he was "parting out" the car.

I'll give the insurance company a ring and see where I would stand regarding covering a car without an MOT.

It doesn't need an MoT, so they won't have anything to say. That would be like checking if they're cool with it not having a factory-fitted alarm and immobiliser. They don't ask if the car is even roadworthy when you insure. Just do it, post-1960 cars are for dweebs!
