Sounds promising. And yes, we do need a recipes corner in the open forum.

As for gammon with pineapple: me, I love the seventies, me, but that's just a bleeeeeeuuuurrrcccchhhhh too far. Useful fruit for savoury cooking: lemon (with pretty much anything) apple (with pork, mainly) juniper (with game) plum (with duck) tomato (if you are in the tomato is fruit camp) Pineapples, strawberries, raspberries, kiwi fruit, grapefruit, melon, mango : NOOOOOOOOO. OK, maybe some mango chutney. Bananas? Well maybe, but I fookan hates them anyway, so bleh.

It is seasoned in brine.But it is seldom served boiled.It's best cooked under a hot grill with brown sugar sprinkled liberally over the fat before cooking.Serve with chips/fried egg/pineapple ring. The acid in Pineapple juice breaks down meat fibres, if you inject enough a joint of pork will look like mince.In WW2 a group of sailors spent some time on a deserted island where the only available food was pineapple,when they were rescued, they didn't have a single tooth left in their heads. Pineapple as raw chunks or just the juice is a nice marinade as well.Poor sailors! Pineapples contain a lot of vitamins and minerals but the human body cannot make use of them without a little amount of oil or fat.
