Have you considered a mobilty car, based on something like a Ford Escort van?  head room, windows all done for you just have to remove the chair gubbins and flatten the floor.

 

Loads around and generally cheap, low milage and seviced.  1.3 petrol or 1.8 diesel all easy peasy.

I like Nissan Vanettes. They are cheap and the high roof jobs would be great for a camper conversion.

Not so good, they are narrow and pub bores who tell you they are slower than a tectonic plate.
