I was thinking about this today. I wonder if an air pocket is hitting the sensor that would explain the temp suddenly shooting up if the sensor was suddenly surrounded by a pocket of steam. Could you fit a another temperature measuring device to the block? Something cheap off eBay, either wireless or Roadkill style with the display gaffer taped to the bonnet.

Then check if the temp really does shoot up or not. I was thinking you could also turn the heater on full and see if the air got hotter when the temp jumped but I'm not sure if either you could detect this yourself or if the thermal mass of the cabin matrix and trunking would damp the temp increase.

Just an idea

could look into somthing like that 

 

i guess now ive sussed when it happens i will take it out and try and make it happen near a layby and leap out and feel the hoses/rad asap

seems its the ecp thermostat been causing the mystery

 

possibly a blocked bleeder hose caused the breakdown  , then me thinking im doing right by fitting a new stat caused the hassle

 

new ford one fitted and seems ok touch wood

Have u sorted it ? our works focus is the MK2 and did exactly this a few weeks back, turned out to be Engine Coolant Temp Sensor.
